Instructions
Step 1: Place a large saucepan on medium heat and add a generous drizzle of olive oil.
Step 2: Add the onions, carrots, and garlic. Season with salt and pepper, then sauté for 5–7 minutes until softened and slightly caramelised.
Step 3: Create some room in the pan and add the v2 Mince. Season lightly, then cook for 4–5 minutes, breaking it up with your spoon until it browns.
Step 4: Add tinned tomatoes, followed by red wine (optional) and veggie stock. Stir through.
Step 5: Add fresh herbs and the bay leaf. Mix well, reduce heat, and let the sauce simmer gently.
Step 6: Meanwhile, bring a pot of salted water to boil. Add spaghetti and cook until al dente.
Step 7: Transfer cooked spaghetti directly into the bolognese pan. Toss until the sauce coats the pasta beautifully.
Step 8: Top with grated parmesan and fresh basil. Serve warm, with crusty bread on the side if you’re feeling extra cosy.
